Cooking with E: Pineapple Pico de Gallo

The perfect accompaniment to the ¡Viva! Soufflé! E's Pineapple Pico de Gallo recipe is one you'll want to keep for all of your Taco Tuesdays, pool parties, and quick and easy appetizer to throw together. It's light and refreshing with just enough kick!

Pineapple Pico de Gallo

Makes 1.5 cups


1/2 cup coarsely chopped fresh ripe pineapple

1/2 cup finely diced tomatillo

1 1/2 tablespoons coarsely chopped cilantro

3 tablespoons fresh lime juice

1/4 medium red onion, finely chopped 

1/4 jalapeño, seeded and chopped fine

2 tablespoons olive oil

Salt and freshly ground pepper to taste


Combine the pineapple, tomatillo, cilantro, lime juice, onion, jalapeño, and olive oil. Season to taste with salt and pepper. Cover and refrigerate until 1 hour before serving. Maybe prepared up to 1 day in advance, covered and refrigerated. Pairs perfectly with the Fab Fête's ¡Viva! Soufflé!
